Preheat your oven to 180°C (350°F).
Coat the sirloin tip roast evenly with olive oil. In a separate bowl, combine the salt, pepper, garlic, thyme, rosemary, and parsley. Rub this seasoning mixture all over the roast.
Place the seasoned roast in a roasting pan or baking dish and cook in the preheated oven for 45-50 minutes, or until the internal temperature of the beef reaches 135°F for medium-rare.
Remove the roast from the oven and transfer it to a sheet of aluminum foil. Loosely cover the roast and allow it to rest for 10-15 minutes before slicing it against the grain.
