Ingredients

  • 6 cups Rice Krispies cereal
  • 1 tablespoon vanilla extract
  • ¼ cup unsalted butter
  • 1 bag mini marshmallows
  • Parchment paper for lining the pan

Instructions

  • In a microwave-safe bowl, combine the butter and marshmallows. Microwave for 1 minute, until melted.
  • Remove the bowl from the microwave, add the vanilla extract, and stir until the mixture becomes smooth and fully blended.
  • Gradually fold in the Rice Krispies, mixing well to ensure the cereal is evenly coated.
  • Line a 9x13-inch baking dish with parchment paper and transfer the mixture into the prepared pan. Use another piece of parchment paper to gently press the mixture into an even layer.
  • Allow the bars to set by letting them rest on the counter for 1 hour, or place them in the fridge for about 30 minutes.
  • Once set, lift the entire block out of the pan and cut it into 12 squares.

Notes

For the best texture, ensure your marshmallows are fresh.
You can also prepare this recipe on the stovetop. Simply melt the butter over low heat, add the marshmallows, and stir until fully melted. Be careful not to overcook!
A pinch of salt can be added to enhance the sweetness of the marshmallows.
Avoid pressing the mixture down too firmly—just enough to form an even layer. If using your hands or a spatula, wet them lightly with water or spray with cooking spray to prevent sticking.
