French Onion Dip Recipe

Ingredients

  • 3/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup sour cream preferably full-fat, but low-fat or yogurt can be used
  • 2 1/2 cups diced onions approximately 2 to 3 onions; brown, yellow, or white
  • 3 tablespoons butter
  • 1/2 teaspoon onion powder
  • 4 ounces 120 grams cream cheese, cold and cubed
  • 1/4 cup whole egg mayonnaise
  • 1/2 teaspoon black pepper

Instructions

  • In a frying pan, melt the butter over medium heat.
  • Add the diced onions, salt, black pepper, onion powder, and cayenne pepper. Stir frequently while cooking for about 5 minutes. Lower the heat to medium-low and continue to cook for an additional 20 to 25 minutes, stirring occasionally until the onions turn golden and sweet. Remove from heat and allow them to cool.
  • In a mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Blend until smooth. If needed, warm in the microwave in short 10-second intervals to facilitate easier mixing.
  • Fold the caramelized onions into the cream mixture and stir until just combined.
  • Chill in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  • Serve the dip at room temperature, garnished with chopped chives if desired. It pairs best with crinkle-cut potato chips.

Notes

This recipe is inspired by Ina Garten’s (Barefoot Contessa) original version with a few modifications:
The butter quantity is reduced from 4 tablespoons plus 1/4 cup oil to just 3 tablespoons of butter for a less greasy texture.
The mayonnaise is reduced from 1/2 cup to 1/4 cup to prevent it from being too rich.
Cream cheese is softened or slightly warmed in the microwave instead of using a stand mixer to blend with mayonnaise and sour cream, which results in a creamier consistency without fluffiness.
Onion powder is added for an extra layer of flavor.
The salt is adjusted down to 3/4 teaspoon from 1 teaspoon for a milder taste.
